May is here, and with it, comes barbecue season! Breaking out the grill is my favorite way to cook. It’s the perfect way to keep the house cool while you whip up some awesome sweet and savory dishes that are full of flavor.

Here are some of my favorite recipes for the grill. I hope you enjoy them as much as I do!

Marinated Greek Chicken Kabobs

Ingredients

  • 1 (8 ounce) container fat-free plain yogurt
  • 1/3 cup crumbled feta cheese with basil and sun-dried tomatoes
  • 1/2 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 1/2 teaspoon salt 
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon crushed dried rosemary
  • 1 pound skinless, boneless chicken breast halves - cut into 1 inch pieces
  • 1 large red onion, cut into wedges
  • 1 large green bell pepper, cut into 1 1/2 inch pieces

Directions

  1. In a large shallow baking dish, mix the yogurt, feta cheese, lemon zest, lemon juice, oregano, salt, pepper, and rosemary. Place the chicken in the dish, and turn to coat. Cover, and marinate 3 hours in the refrigerator.
  2. Preheat an outdoor grill for high heat.
  3. Thread the chicken, onion wedges, and green bell pepper pieces alternately onto skewers. Discard remaining yogurt mixture.
  4. Grill skewers on the prepared grill until the chicken is no longer pink and juices run clear.

Grilled Corn On The Cob

Ingredients

  • 6 ears corn
  • 6 tablespoons butter, softened
  • salt and pepper to taste

Directions

  1. Preheat an outdoor grill for high heat and lightly oil grate.
  2. Peel back corn husks and remove silk. Place 1 tablespoon butter, salt and pepper on each piece of corn. Close husks.
  3. Wrap each ear of corn tightly in aluminum foil. Place on the prepared grill. Cook approximately 30 minutes, turning occasionally, until corn is tender.

Yummy Grilled Pineapple

 Ingredients

  • 1/2 cup chocolate-hazelnut spread
  • 1/4 cup milk
  • 1/2 fresh pineapple, peeled and cored
  • 1/4 cup walnuts

Directions

  1. Preheat grill for medium heat and lightly oil the grate.
  2. Heat chocolate-hazelnut spread and milk in a small saucepan over medium heat, stirring until spread is melted, about 5 minutes. Remove from heat.
  3. Grill pineapple on preheated grill until lightly browned, 3 to 5 minutes per side. Transfer pineapple to a platter. Drizzle with chocolate mixture and sprinkle walnuts on top.

So get to it! Pick up your charcoal or propane and get ready to grill up a feast for the whole family. It’s a great way to make a fast and tasty dinner during the week, or an easy way to impress guests on the weekend. I hope you enjoy these treats.
